Avocado and Tomato Sandwich: A Simple Meal to Nourish Your Skin
Some days, I want something fresh and filling without spending much time in the kitchen. An avocado and tomato sandwich is one of my favorite meals for those days.
It takes only a few minutes to make, and I can change it depending on what I have. Sometimes I keep it simple with avocado and tomato. Other times I add an egg, salmon, chicken, or chickpeas when I want more protein.
Why I Like This Sandwich
The avocado makes the sandwich creamy without needing mayonnaise or another spread. The tomato adds freshness and keeps the avocado from tasting too rich.
Avocados contain fiber and healthy fats, while tomatoes provide vitamin C and plant compounds such as lycopene. Both are useful additions to a diet that nourishes your skin from within.
I also like that this meal is made with familiar ingredients. You do not need a long grocery list or anything you will struggle to use again.

Choosing the Bread
I usually make this sandwich with whole grain or sourdough bread.
Whole grain bread adds fiber, while sourdough gives the sandwich more flavor. I lightly toast the bread because it holds the avocado and tomato better and does not become soggy as quickly.
Use whichever bread you already enjoy. It simply needs to be sturdy enough to hold the filling.
Choosing the Avocado and Tomato
The avocado should feel slightly soft when you press it gently. If it feels hard, it will be difficult to mash. If it feels very soft, it may already be brown inside.
I prefer tomatoes that are firm but ripe. Very juicy tomatoes can make the bread soggy, so I sometimes pat the slices lightly before adding them.
I also add a small squeeze of lemon or lime juice to the avocado. It adds flavor and helps keep it from turning brown as quickly.

Add Protein When You Want a More Filling Meal
The sandwich can be eaten as it is, but I often add protein when I know I need something that will keep me full longer.
A sliced boiled egg is one of the easiest choices. Canned salmon, leftover chicken, turkey, or mashed chickpeas also work well.
I usually add the protein directly over the avocado before placing the tomato on top.
Other Ways I Make It
I do not prepare this sandwich exactly the same way every time.
Sometimes I add cucumber for crunch or a few thin slices of red onion for more flavor. Pumpkin seeds or sunflower seeds can also be sprinkled over the avocado.
When I want something lighter, I make it open faced and use one slice of bread. When I am hungrier, I use two slices and add protein.
What I Serve With It
Fruit, soup, a small salad, raw vegetables, or a boiled egg all work well with this sandwich.
What I add depends on what I have and how hungry I am. I do not make a separate side just because I feel like the meal needs one.
That is what I like about this sandwich. It is quick, tastes fresh, and can be adjusted without making lunch more work than it needs to be.
